As an additional comment, I’m just reading the wonderful cookbook “Japanese Home Cooking” by Sonoko Sakai. It includes a shout-out to Keisaburo Koda, The Rice King of California featured in this episode and talks about how the family rebuilt after WWII internment and the loss of all their assets.
